How to Publish a Cookbook

The short answer

A cookbook is a collection of tested recipes with a layout readers can follow with floury hands. To publish one, test and standardise every recipe, photograph the dishes, lay out each recipe so it fits its page, then print in colour, often on a square or large-format page.

What makes a cookbook different from other books?

A cookbook is used, not just read. Readers cook from it with the book open on a counter, so layout matters as much as the writing: one recipe per spread where you can, ingredients in a list, steps numbered, and a page that lies flat.

It is also usually a colour book. Photographs sell the food, and colour interior printing costs more per page than black and white, which is why cookbook pricing looks different from a novel's.

How to publish a cookbook, step by step

  1. Decide the angle: a cuisine, a diet, an occasion or a family collection. A cookbook with one clear promise is easier to sell than a general collection.
  2. Test every recipe, and test it again with someone else cooking it. Standardise units (cups and grams, for example) and the order in which each recipe is written.
  3. Plan the photography. Shoot in consistent light and style, and keep every image at print resolution. Photos from a phone are fine if they are sharp and well lit.
  4. Write the headnotes, the introduction and any technique pages, then edit for clarity: a recipe is wrong if a step is missing.
  5. Lay out the interior in a layout tool, with a repeatable recipe template. Decide whether each recipe fits one page or one spread and stick to it.
  6. Design the cover and the spine. The cover is a single sales photograph and a title that says what the book is.
  7. Get an ISBN, then order a proof copy. Check that photographs print as bright as on screen and that the book opens flat.
  8. Print your run, or sell through print on demand if you do not want to hold stock.

Recipes, copyright and credit

A bare list of ingredients and the plain statement of how to combine them is generally not protected by copyright in the United States. The descriptive text around a recipe, the photographs and the way a collection is arranged are protected (U.S. Copyright Office, Circular 33). Even so, credit the source when a recipe comes from someone else, and rewrite it in your own words.

Photographs of other people's dishes, or images you did not take, need the photographer's permission.

What does it cost to print a cookbook?

Photo-led cookbooks usually print in colour on a square or large page, and coated paper shows food photography best. Colour is the biggest driver of the print price.

Frequently asked questions

How many recipes does a cookbook need?

There is no fixed number. Many printed cookbooks hold 50 to 100 recipes. What matters is that the number suits the page count you can afford to print in colour.

Should a cookbook be printed in colour?

If photographs are central, yes. A black-and-white cookbook with line drawings or a few colour inserts can cost much less to print, and suits a family or community recipe collection.

Paperback or hardcover for a cookbook?

A hardcover lasts longer in a kitchen and suits a gift book. A paperback costs less per copy. Use the printing calculator to compare both for your page count.
